Carrot Soup – an Ayurvedic recipe for balancing Vata.

We’re in the midst of the season when Vata dosha can quickly become out of balance. Dry skin, constipation, sleeplessness, anxiety, nervous system issues, and more are all symptoms of an imbalanced Vata. Enjoy this easy, delicious carrot soup to help balance your Vata dosha!

Ingredients

  • 2 cups carrots, sliced
  • 1/2 cup onion, chopped
  • 2 tablespoons butter or ghee
  • 1 rib celery, chopped
  • 2 cups vegetable broth
  • 1 cup milk
  • 1/4 tsp nutmeg
  • salt and pepper to taste as required

Melt the butter or ghee in a large pot and cook the onion and celery. Cook for 5 minutes after adding carrots. Cook for 20 minutes with the lid closed., or until the vegetables are cooked. Turn off the heat. In a blender, puree the ingredients (or use a hand blender). Return to the heat and simmer for 15 minutes with the milk, nutmeg, salt, and pepper.

This is a simple soup with numerous ways to customise it. Add some chopped fresh ginger, sunflower seeds, grated zucchini, etc. to get a different taste and flavour in your soup.
